As the spring garden comes to a close, my neglected bok choy and a few missed radishes decided to make themselves known. Almost overnight, these small plants erupted with small bursts of yellow and white flowers, stealing the show from my snapdragons and violas. While some may see these plants bolting and think to pull them out of the ground, these bolted plants serve as another source of food to pollinators, drawing more beneficial insects into your garden, and giving back to the organisms that keep your garden growing. On top of this, these accidental flowers act as great fillers to your garden bouquets. By letting these plants flower, you are feeding bees, filling vases, and letting gardening do what it does best: surprise you when you least expect it.
